We’ve been able to feature a relatively high number of coffees from Papua New Guinea over the past several years, which we attribute largely to the confluence of great coffee genetics, excellent terroir, and a renaissance in coffee processing. Widespread coffee production began in the early 1900’s in PNG and a huge portion of the coffee grown in PNG has its roots in the varieties of coffee brought in by missionaries during a period of time when bourbon and typica were exceedingly popular. Blue mountain, so popularized as to reach near synonymity with Jamaica, is one of the earlier Bourbon\/Typica hybrids and is widely cultivated on PNG. Mundo Novo and Arusha are typica\/bourbon hybrids that also produce excellent cups and were brought to PNG in the 1950’s. A lack of infrastructure held back the quality of coffee in PNG for most of the century following the introduction of these excellent varieties, but that has changed in recent years, which has allowed for the quality of the genetic stock to really shine.\u003cbr\u003eThis lot of coffee is unique in that natural processes from Papua New Guinea are few and far between as the cool wet climate in the Papua New Guinea highlands is not conducive to drying coffee with the fruit intact. This coffee was dried for a full month before being prepared for export. The drying process is the last step in the process of selecting only the highest quality coffee cherries from smallholder farmers. \u003c\/p\u003e\n\u003cp\u003eBrew Notes: \u003cbr\u003eWe recommend using around a 1:15 brew ratio for this coffee. The collective was founded in 2018 with the purpose of constructing and operating a mill that was more centrally located to the member’s farms. This batch of Mbewe’s coffee was fully washed and then fermented for between 24 and 36 hours before being slowly dried on raised beds over a period of one to two weeks. \u003cbr\u003eMbewe is composed entirely of the Bourbon and N39 varieties. N39 is an older descendant of Bourbon that was developed by the Tanzania Coffee Research Institute in the 1930’s. As is the case with neighboring Kayanza, the farms that produced this coffee grow the Red Bourbon variety, which contributes to the sweetness and overall high quality of this coffee. \u003cbr\u003eThe coffee was processed as what they term a “minimal-intervention natural:” coffee is hand picked, floated to remove less dense coffee, hand sorted, and sun-dried over a relatively short period of time. The result is a coffee that balances the red fruity notes and syrupy sweetness of a natural with the clarity and crispness of a washed coffee. It is run by Silvia Nishikawa, a part of the Japanese-Brazilian community which is renowned for producing extremely high quality coffee in Brazil. \u003cbr\u003eEstevam Mario runs Fazenda Nossa Senhora which covers 395 hectares. While coffee makes up the majority of the land use, a significant portion ~160 hectares is a preserve for the native landscape. He also produces organic fertilizers from coffee pulp and micro-organisms found on the estate. The estate has housing for workers and a school to ensure a full education for the workers’ children. \u003cbr\u003eThe coffee from both of these farms was processed using an anaerobic fermentation.
