The red fruit notes combine with notes of fermentation and dark chocolate to create a flavor similar to a cherry liqueur. The fruit notes become more prominent as the cup cools, but the cooling cup also reveals the more herbaceous overtones characteristic of Papua New Guinean coffees, particularly cacao nibs, cola nut, marshmallow, and pipe tobacco.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003cstrong\u003eProducer Notes: \u003c\/strong\u003e\u003cbr\u003eWe’re incredibly happy to have another natural processed Papua New Guinean (PNG) coffee. We’ve been able to feature a relatively high number of coffees from Papua New Guinea over the past several years, which we attribute largely to the confluence of great coffee genetics, excellent terroir, and a renaissance in coffee processing. Widespread coffee production began in the early 1900’s in PNG and a huge portion of the coffee grown in PNG has its roots in the varieties of coffee brought in by missionaries during a period of time when bourbon and typica were exceedingly popular. Blue mountain, so popularized as to reach near synonymity with Jamaica, is one of the earlier Bourbon\/Typica hybrids and is widely cultivated on PNG. Mundo Novo and Arusha are typica\/bourbon hybrids that also produce excellent cups and were brought to PNG in the 1950’s. A lack of infrastructure held back the quality of coffee in PNG for most of the century following the introduction of these excellent varieties, but that has changed in recent years, which has allowed for the quality of the genetic stock to really shine.\u003cbr\u003eThis lot of coffee is unique in that natural processes from Papua New Guinea are few and far between as the cool wet climate in the Papua New Guinea highlands is not conducive to drying coffee with the fruit intact. This coffee was dried for a full month before being prepared for export. The drying process is the last step in the process of selecting only the highest quality coffee cherries from smallholder farmers. \u003c\/p\u003e\n\u003cp\u003eBrew Notes: \u003cbr\u003eWe recommend using around a 1:15 brew ratio for this coffee. We feel that the fresh crop of this coffee preserves the essence of what we loved in the previous crop, but is also distinct and unique in a way that we prefer. While the previous crop was a bit bombastic in its delivery of fruit and fermentation notes, this crop is more mellow, albeit still not subtle. There is a larger volume of coffee, usually of poorer quality, sold by smallholder farmers to wet mills and then sold at commodity or below market prices. We get lots of red grape and apple acidity off the bat. Baking spices such as cinnamon, nutmeg, and hints of clove and star anise are joined by the sweetness of corn syrup or malted barley. The result of these melding flavors is baked apples, spiced raisin, and an overall impression of apple tart. Berry, primarily strawberry and raspberry, is also present; as is sweet, malty, black tea. In cups with a higher brew ratio, milk chocolate blends with the grainy sweetness to create a flavor reminiscent of tootsie roll.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eProducer Notes: \u003cbr\u003eThis coffee is from the Nyaruguru district of Rwanda which borders Kayanza, Burundi. Busanze is the name of the mill that serves the 81 member cooperative that produced this coffee. The cooperative is composed of 51 female-owned farms and has won national recognition for the quality of their coffee. As is the case with neighboring Kayanza, the farms that produced this coffee grow the Red Bourbon variety, which contributes to the sweetness and overall high quality of this coffee. \u003cbr\u003eThe coffee was processed as what they term a “minimal-intervention natural:” coffee is hand picked, floated to remove less dense coffee, hand sorted, and sun-dried over a relatively short period of time. The result is a coffee that balances the red fruity notes and syrupy sweetness of a natural with the clarity and crispness of a washed coffee. Overall, the coffee tastes more similarly to a black honey processed coffee than a traditional, longer fermented, natural.  \u003cbr\u003eBrew Notes: \u003cbr\u003eWe recommend using around a 1:15 brew ratio for this coffee. Tri S farm is part of the Sustainably Sourced and Supplied certification program (hence the name.) The program focuses on stopping deforestation as well as the adoption of new technology and management for sustainable agriculture. It is run by Silvia Nishikawa, a part of the Japanese-Brazilian community which is renowned for producing extremely high quality coffee in Brazil. \u003cbr\u003eEstevam Mario runs Fazenda Nossa Senhora which covers 395 hectares. While coffee makes up the majority of the land use, a significant portion ~160 hectares is a preserve for the native landscape. He also produces organic fertilizers from coffee pulp and micro-organisms found on the estate. The estate has housing for workers and a school to ensure a full education for the workers’ children. \u003cbr\u003eThe coffee from both of these farms was processed using an anaerobic fermentation.
