Around half of the farmers that produced this coffee are members of the Tzotzil and Tzeltal indigenous populations, all of whom practice organic farming practices. This coffee takes its name from the indigenous word for tasteful Ki. The median farm size is just under three hectares and employs many shade trees that harbor bird and insect species which naturally keep coffee pest populations in check, while slowing the development of coffee fruits, resulting in superior coffee. \u003cbr\u003eThe coffee is handpicked before being fermented for between 12 and 18 hours, washed, and sun dried. We feel that the fresh crop of this coffee preserves the essence of what we loved in the previous crop, but is also distinct and unique in a way that we prefer. While the previous crop was a bit bombastic in its delivery of fruit and fermentation notes, this crop is more mellow, albeit still not subtle. We love to follow the journey of coffee producers we partner with for multiple years and see the progression of their coffees as they innovate and refine their techniques to produce ever better coffee.  \u003cbr\u003eThis lot of coffee is particularly unique in that natural processes from Papua New Guinea are few and far between as the cool wet climate in the Papua New Guinea highlands is not conducive to drying coffee with the fruit intact. This coffee was dried for a full month before being prepared for export. The drying process is the last step in the process of selecting only the highest quality coffee cherries from smallholder farmers. \u003cbr\u003eTypically, the best lots of coffee from Papua New Guinea come from vertically integrated coffee plantations that can control the process step by step. There is a larger volume of coffee, usually of poorer quality, sold by smallholder farmers to wet mills and then sold at commodity or below market prices. The collective was founded in 2018 with the purpose of constructing and operating a mill that was more centrally located to the member’s farms. This batch of Mbewe’s coffee was fully washed and then fermented for between 24 and 36 hours before being slowly dried on raised beds over a period of one to two weeks. \u003cbr\u003eMbewe is composed entirely of the Bourbon and N39 varieties. N39 is an older descendant of Bourbon that was developed by the Tanzania Coffee Research Institute in the 1930’s. The variety produces top quality cup qualities, is more resistant to coffee berry disease and adverse temperatures, and is therefore grown widely in Tanzania. \u003c\/p\u003e\n\u003cp\u003eBrew Notes: \u003cbr\u003eThis coffee benefits from moderate brew water and lower brew ratios. This lot of coffee was hand picked at optimum ripeness and delivered the same day to Shefina where it was wet fermented for 48 hours before being washed and dried on raised beds for between one and two weeks until optimum moisture content was achieved. \u003cbr\u003eThe heirloom varieties of coffee that compose this coffee were grown in land coffee is endemic to and was grown using traditional growing methods.
